Instructions
- Start by preheating your oven to 375°F if you prefer baking over frying. Line a baking sheet with parchment paper to prevent sticking.
- In a food processor, pulse the cooked chickpeas until they’re coarsely ground but not pureed. You want some texture to hold the bites together.
- Transfer the chickpeas to a mixing bowl. Add the panko breadcrumbs, Parmesan cheese, minced garlic, parsley, smoked paprika, cumin, salt, and pepper. Mix well to combine all the flavors.
- Crack in the egg and stir everything together until the mixture holds together when pressed. If it feels too wet, add a little more panko; if too dry, a splash of water or olive oil will help.
