Description

Learn how to make delicious Backyard Belly Button Bites. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 cup cooked chickpeas (or 1 can, drained and rinsed)
  • 1/2 cup panko breadcrumbs (substitute with crushed crackers or gluten-free crumbs)
  • 1/4 cup finely grated Parmesan cheese (or nutritional yeast for a dairy-free option)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped (or 1 teaspoon dried parsley)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1 large egg (or flax egg for vegan version)
  • 2 tablespoons olive oil (for frying or brushing before baking)
  • Optional: 1/4 cup finely chopped sun-dried tomatoes for a tangy kick

Instructions

  1. Start by preheating your oven to 375°F if you prefer baking over frying. Line a baking sheet with parchment paper to prevent sticking.
  2. In a food processor, pulse the cooked chickpeas until they’re coarsely ground but not pureed. You want some texture to hold the bites together.
  3. Transfer the chickpeas to a mixing bowl. Add the panko breadcrumbs, Parmesan cheese, minced garlic, parsley, smoked paprika, cumin, salt, and pepper. Mix well to combine all the flavors.
  4. Crack in the egg and stir everything together until the mixture holds together when pressed. If it feels too wet, add a little more panko; if too dry, a splash of water or olive oil will help.
  5. If you’re adding sun-dried tomatoes, fold them in now for a burst of tangy sweetness.
  6. Using your hands, form small, round bites roughly the size of a walnut. This is a great step to get the kids involved—my son Eli loves shaping these little guys and proudly calls them “mommy’s belly buttons.”
  7. To cook, choose your method: For baking, place the bites on the prepared sheet, brush lightly with olive oil, and bake for 20-25 minutes, flipping halfway through, until golden and crispy. For frying, heat olive oil in a skillet over medium heat, and cook the bites for about 3 minutes per side until nicely browned.
  8. Let the Backyard Belly Button Bites cool for a few minutes on a wire rack before serving. This helps them firm up and keeps that perfect crispy edge.
