Description
Learn how to make delicious Chocolate Banana Fluff. Easy recipe with step-by-step instructions.
Ingredients
Scale
- 3 large ripe bananas (the riper, the sweeter)
- 1/4 cup unsweetened cocoa powder
- 1/2 cup Greek yogurt (plain or vanilla for extra sweetness)
- 1/4 cup honey or maple syrup (adjust to taste)
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream or full-fat coconut cream (for a dairy-free option)
- Pinch of salt
- Optional: 1/4 cup mini chocolate chips or chopped nuts for texture
If you prefer a vegan version, swapping the honey for maple syrup and using coconut cream instead of heavy cream works beautifully. Early on in my kitchen experiments, I learned the value of substitutions like these—making recipes work with what you have is part of the joy of home cooking. And if you don’t have Greek yogurt, a thick plant-based yogurt can also do the trick, keeping the creaminess intact.
Instructions
- Peel the bananas and place them in a medium bowl. Mash them well with a fork or potato masher until mostly smooth with a few small lumps remaining. This texture adds a nice homemade feel to the fluff.
- Add the unsweetened cocoa powder, Greek yogurt, honey (or maple syrup), vanilla extract, and a pinch of salt to the mashed bananas. Stir until fully combined and smooth. At this point, taste your mixture and adjust sweetness if needed—bananas can vary in sweetness depending on ripeness.
- In a separate chilled bowl, pour the heavy cream (or coconut cream) and whisk with a hand mixer or whisk vigorously by hand until soft peaks form. This might take around 3-5 minutes with an electric mixer; if whisking by hand, be patient and steady. The cream should hold its shape but still be soft and airy.
- Gently fold the whipped cream into the banana-chocolate mixture using a spatula. Take your time here to keep the fluff light and airy—overmixing will deflate the cream and lose that signature texture.
- If you like, fold in mini chocolate chips or chopped nuts for some crunch and extra chocolate bursts. This step is optional but adds a lovely contrast.
- Divide the fluff into serving dishes or one large bowl. Chill in the refrigerator for at least 1 hour to let flavors meld and the fluff set slightly. This chilling step is key to achieving the right consistency.
- Before serving, give the fluff a gentle stir and garnish with extra banana slices, a sprinkle of cocoa powder, or a few chocolate chips for presentation. Watching Eli’s eyes light up when I add a few chocolate chips on top is one of those small joys that keeps me cooking.
