  • 1 cup semisweet chocolate chips
  • 1/2 cup caramel sauce (store-bought or homemade)

Substitutions: If you don’t have light corn syrup, you can use golden syrup or a mix of honey and water (3/4 cup honey + 1/4 cup water). For caramel sauce, dates blended with a bit of coconut cream make a tasty alternative. And if pecans aren’t your thing, walnuts or almonds work just as well.


Instructions

  1. Preheat your oven to 350°F (175°C). Place the unbaked pie crust in a 9-inch pie dish and set aside.
  2. In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth and combined.
  3. Scatter the pecan halves evenly over the bottom of the pie crust.
  4. Pour the syrupy egg mixture over the pecans, making sure they are well coated.
  5. Sprinkle the chocolate chips evenly on top of the pie filling.
  6. Drizzle the caramel sauce over the chocolate chips in a swirling motion—you want just enough to create pockets of gooey caramel without sinking to the bottom.
  7. Bake for 55-60 minutes, or until the filling is set but still slightly wobbly in the center. The crust should be golden and the pecans toasted.
  8. Remove from the oven and let cool completely on a wire rack before slicing. This step is crucial for the filling to firm up and slice cleanly—trust me on this one. I learned early on that rushing to cut into a hot pecan pie leads to a messy kitchen and sad slices.
