Substitutions: If you don’t have light corn syrup, you can use golden syrup or a mix of honey and water (3/4 cup honey + 1/4 cup water). For caramel sauce, dates blended with a bit of coconut cream make a tasty alternative. And if pecans aren’t your thing, walnuts or almonds work just as well.
Instructions
- Preheat your oven to 350°F (175°C). Place the unbaked pie crust in a 9-inch pie dish and set aside.
- In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, vanilla extract, and salt until smooth and combined.
- Scatter the pecan halves evenly over the bottom of the pie crust.
- Pour the syrupy egg mixture over the pecans, making sure they are well coated.
- Sprinkle the chocolate chips evenly on top of the pie filling.
- Drizzle the caramel sauce over the chocolate chips in a swirling motion—you want just enough to create pockets of gooey caramel without sinking to the bottom.
- Bake for 55-60 minutes, or until the filling is set but still slightly wobbly in the center. The crust should be golden and the pecans toasted.
