Feel free to substitute the graham cracker crumbs with crushed digestive biscuits if you prefer a slightly different texture. And if you’re out of ground ginger, a pinch of allspice can add a delightful depth to the cheesecake.


Instructions

  6. Pour half of the plain cream cheese mixture over the crust. Gently spoon half of the pumpkin mixture on top. Repeat with the remaining mixtures, creating a layered effect.
  7. Use a knife to gently swirl through the layers, creating a marbled pattern. This step is where the magic happens, so take your time to achieve a beautiful swirl.
  8. Bake in the preheated oven for 50-60 minutes, or until the center is set and a slight jiggle remains. Overbaking can lead to cracks, so keep a close eye on it.
