Learn how to make delicious Crockpot Potato Hamburger Soup Recipe. Easy recipe with step-by-step instructions.
Ingredients
Scale
- 1 pound ground beef (you can substitute ground turkey or plant-based crumbles for a lighter or vegetarian option)
- 4 medium russet potatoes, peeled and diced into 1/2-inch cubes
- 1 large onion, finely chopped (yellow or white works great)
- 3 cloves garlic, minced
- 4 cups beef broth (or vegetable broth for a lighter twist)
- 1 cup whole milk or heavy cream (for a richer soup, or use evaporated milk for a lighter option)
- 2 cups shredded cheddar cheese (optional but highly recommended for that melty, comforting finish)
- 2 teaspoons Worcestershire sauce (adds depth, but can be omitted if unavailable)
- 1 teaspoon smoked paprika (for a subtle smoky warmth)
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 2 tablespoons all-purpose flour (to thicken the soup; substitute cornstarch if gluten-free)
- 2 tablespoons olive oil or vegetable oil (for browning the beef)
- Optional garnish: chopped green onions or fresh parsley
Instructions
- Start by heating the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned and no longer pink, breaking it up into small pieces as it cooks. This step helps develop flavor and prevents the soup from becoming too greasy. Once browned, remove the beef with a slotted spoon and set aside.
- In the same skillet, add the chopped onion and sauté for about 3-4 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant. This step is key to building a flavorful base.
- Transfer the browned beef, sautéed onions, and garlic to your crockpot. Add the diced potatoes, beef broth, Worcestershire sauce, smoked paprika, dried thyme, salt, and pepper. Give everything a good stir to combine.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the flavors meld together. I usually set mine up in the morning on low, so it’s ready by dinnertime—a true lifesaver on busy days.
- About 30 minutes before serving, whisk the flour into the milk until smooth to avoid lumps. Slowly stir this mixture into the crockpot to thicken the soup. Add the shredded cheddar cheese and stir until melted and fully incorporated. If you want a creamier soup, feel free to add more milk or cheese here.
- Taste and adjust seasoning with additional salt and pepper if needed. If the soup is too thick, thin it out with a splash of broth or milk.
- Serve hot, garnished with chopped green onions or parsley if you like. Eli always gets excited when the cheese melts just right—he’s a tough critic, and if he’s happy, I know I’ve nailed it.
