Description
Learn how to make delicious Delicious Creamy Crack Chicken Gnocchi. Easy recipe with step-by-step instructions.
Ingredients
Scale
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces (thighs work well too for more flavor)
- 1 pound store-bought gnocchi (fresh or frozen)
- 2 tablespoons olive oil or butter
- 3 cloves garlic, minced
- 1 cup chicken broth (low sodium preferred)
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme or Italian seasoning
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped for garnish (optional)
- Substitution tip: Use half-and-half instead of heavy cream for a lighter sauce, and swap cream cheese with Greek yogurt mixed with a bit of cornstarch if you want a tangier twist.
Instructions
- Heat the olive oil or butter in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, and smoked paprika, and cook until golden brown and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant—don’t let it burn! This little step really builds the base flavor.
- Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the pan. This adds wonderful depth, a trick I picked up from my culinary classes that really elevates simple dishes.
- Add the cream cheese, stirring constantly until melted and smooth. Then pour in the heavy cream and stir to combine. Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
- While the sauce is thickening, cook the gnocchi separately according to package instructions—usually boiling for 2-3 minutes until they float to the surface. Drain and add them directly to the sauce.
- Return the cooked chicken to the skillet, add mozzarella and Parmesan cheese, and stir everything together until the cheese melts and the gnocchi is fully coated in that creamy sauce.
- Season to taste with additional salt, pepper, and thyme or Italian seasoning. I like adding fresh parsley here, both for color and brightness that cuts through the richness.
- Serve immediately, ideally while the sauce is still warm and silky. The first time I made this for Maya and Eli, Eli’s eyes lit up with every bite, and that’s when I knew this recipe was a keeper.
