- Preheat your oven to 325°F and line a cupcake pan with paper liners.
- In a small bowl, mix the graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Divide the mixture evenly among the liners, pressing it down firmly to create a base.
- Bake the crusts for 5 minutes, then remove from the oven and let cool.
- In a large bowl, beat the softened cream cheese and 2/3 cup sugar until smooth and creamy, about 2-3 minutes.
- Add in the eggs one at a time, beating well after each addition.
- Mix in the vanilla bean paste, sour cream, heavy cream, and a pinch of salt until fully combined.
- Pour the cheesecake batter over the cooled crusts, filling each cup nearly to the top.
- Bake for 20-25 minutes, or until the centers are set but still slightly jiggly.
