  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla bean paste or pure vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • Pinch of salt
  • 1/4 cup superfine sugar for caramelizing


Instructions

  1. Preheat your oven to 325°F and line a cupcake pan with paper liners.
  2. In a small bowl, mix the graham cracker crumbs, 2 tablespoons of sugar, and melted butter. Divide the mixture evenly among the liners, pressing it down firmly to create a base.
  3. Bake the crusts for 5 minutes, then remove from the oven and let cool.
  4. In a large bowl, beat the softened cream cheese and 2/3 cup sugar until smooth and creamy, about 2-3 minutes.
  5. Add in the eggs one at a time, beating well after each addition.
  6. Mix in the vanilla bean paste, sour cream, heavy cream, and a pinch of salt until fully combined.
  7. Pour the cheesecake batter over the cooled crusts, filling each cup nearly to the top.
  8. Bake for 20-25 minutes, or until the centers are set but still slightly jiggly.
  9. Allow the cupcakes to cool to room temperature, then refrigerate for at least 2 hours or overnight.
  10. Before serving, sprinkle superfine sugar evenly over the tops of the cupcakes and use a kitchen torch to melt and caramelize the sugar until golden brown.
