- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
- Spread the pecan halves evenly on the baking sheet. Toast them in the oven for about 8 minutes, or until they become fragrant and slightly darker. Keep an eye on them to avoid burning. Toasting brings out the nutty flavor that’s essential to these turtles.
- While the pecans cool slightly, prepare the caramel. In a medium saucepan over medium heat, combine the granulated sugar and butter. Stir continuously until the sugar melts completely and the mixture turns a golden amber color, approximately 5-7 minutes. This step requires patience—don’t rush, or the caramel can burn. If you’ve ever had a caramel disaster like I did when I was twelve, you know how quickly things can go south!
- Remove the saucepan from heat and carefully whisk in the heavy cream, salt, and vanilla extract. The mixture will bubble vigorously—this is normal. Stir until smooth and creamy.

- Return the sheet to the refrigerator and chill for at least 30 minutes or until the chocolate is firm.
