Description

Learn how to make delicious Easy Christmas Pecan Turtles. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 cup pecan halves (use toasted for extra depth, or substitute with walnuts if desired)
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter (half a stick), cubed
  • 1/4 cup heavy cream (can substitute with full-fat coconut milk for dairy-free version)
  • 1/4 teaspoon sea salt (adjust depending on your caramel preference)
  • 1 teaspoon vanilla extract
  • 6 ounces semi-sweet or dark chocolate chips (or chopped chocolate bars for better melting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Spread the pecan halves evenly on the baking sheet. Toast them in the oven for about 8 minutes, or until they become fragrant and slightly darker. Keep an eye on them to avoid burning. Toasting brings out the nutty flavor that’s essential to these turtles.
  3. While the pecans cool slightly, prepare the caramel. In a medium saucepan over medium heat, combine the granulated sugar and butter. Stir continuously until the sugar melts completely and the mixture turns a golden amber color, approximately 5-7 minutes. This step requires patience—don’t rush, or the caramel can burn. If you’ve ever had a caramel disaster like I did when I was twelve, you know how quickly things can go south!
  4. Remove the saucepan from heat and carefully whisk in the heavy cream, salt, and vanilla extract. The mixture will bubble vigorously—this is normal. Stir until smooth and creamy.
  5. Drop a teaspoon of caramel onto each pecan half arranged back on the parchment-lined baking sheet. Use just enough caramel to coat the top of the pecan but not so much that it pools excessively. This way, every bite has a perfect balance of nut and caramel.
  6. Place the baking sheet in the refrigerator for about 15 minutes to let the caramel set slightly while you melt the chocolate.
  7. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until smooth. Alternatively, use a double boiler on the stovetop for more control.
  8. Spoon a small dollop of melted chocolate over each caramel-coated pecan. Gently spread it to cover the caramel completely, creating that classic turtle look. The chocolate acts like a seal, keeping the caramel soft inside but preventing it from sticking to fingers.
  9. Return the sheet to the refrigerator and chill for at least 30 minutes or until the chocolate is firm.
  10. Once set, transfer the turtles to an airtight container. They’re ready to enjoy immediately or can be stored for later.
