Instructions

  1. Start by heating the olive oil in a large skillet over medium heat. Add the sliced onions and a pinch of salt, cooking slowly for about 20-25 minutes. Stir frequently until the onions are deeply caramelized and golden brown.   2. While the onions cook, season your beef roast generously with salt and pepper on all sides.
