  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 bell pepper, cut into 1-inch pieces
  • 1 zucchini, sliced into rounds
  • Wooden or metal skewers

Feel free to substitute with turkey or chicken if you prefer a leaner meat. For a vegetarian twist, you could even use chickpeas blended with breadcrumbs and spices.


Instructions

  1. Start by soaking the wooden skewers in water for at least 30 minutes to prevent them from burning. If you’re using metal skewers, you can skip this step.
  2. In a large bowl, combine the ground beef, onion, garlic, parsley, cumin, paprika, salt, and pepper. Mix until all the ingredients are well incorporated. This is where I like to get my hands dirty, just like when I experimented with that oversalted chili all those years ago.
  3. Form the mixture into small, oval-shaped patties, about the size of your palm. These will be threaded onto the skewers later.
  4. Thread the beef patties onto the skewers, alternating with pieces of bell pepper and zucchini slices. This not only adds flavor but also makes for a colorful presentation.
  5. Heat a grill pan over medium-high heat and brush it with olive oil. Once hot, place the skewers on the pan.
  6. Cook the kabobs for about 10-12 minutes, turning occasionally, until the beef is well browned and cooked through. You’ll know they’re done when they have a nice char and the vegetables are tender.
  7. Remove from the grill and let them rest for a couple of minutes before serving. Resting helps the juices redistribute, ensuring each bite is juicy and flavorful.
