Instructions
- Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Drain excess fat, leaving about 1 tablespoon in the skillet. Add the diced onion and minced garlic to the beef, sautéing until the onion is translucent, around 3 minutes.
- Stir in the diced tomatoes, bell pepper, cumin, chili powder, smoked paprika, black pepper, and salt. Cook for another 5 minutes, allowing the flavors to meld.
- Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low and let it cook for 10 minutes, stirring occasionally.
- Add the cooked quinoa to the skillet, stirring to combine. Cook for an additional 5 minutes until everything is heated through.
