Description

Learn how to make delicious ground beef low calorie recipes. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 pound lean ground beef (90% lean)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes, no salt added
  • 1 bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1 cup low-sodium beef broth
  • 1 cup cooked quinoa (or brown rice for a gluten-free option)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  2. Drain excess fat, leaving about 1 tablespoon in the skillet. Add the diced onion and minced garlic to the beef, sautéing until the onion is translucent, around 3 minutes.
  3. Stir in the diced tomatoes, bell pepper, cumin, chili powder, smoked paprika, black pepper, and salt. Cook for another 5 minutes, allowing the flavors to meld.
  4. Pour in the beef broth and bring the mixture to a simmer. Reduce the heat to low and let it cook for 10 minutes, stirring occasionally.
  5. Add the cooked quinoa to the skillet, stirring to combine. Cook for an additional 5 minutes until everything is heated through.
  6. Remove from heat and garnish with fresh cilantro if desired. Serve hot and enjoy!
