  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (14 ounces) diced tomatoes, undrained
  • 1 cup cooked brown rice
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn
  • 1/2 cup shredded cheddar cheese (optional)
  • 1 lime, cut into wedges
  • Fresh cilantro for garnish (optional)

Feel free to substitute the ground beef with ground turkey or chicken for a leaner option. You can also swap the brown rice for quinoa or farro if you’re looking to mix things up!


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the diced bell pepper, cumin, smoked paprika, salt, and black pepper. Cook for an additional 3 minutes until the bell pepper softens.
  4. Pour in the diced tomatoes and bring the mixture to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
  5. Add the cooked brown rice, black beans, and frozen corn to the skillet. Stir to combine and cook until heated through, around 5 minutes.
  6. If using, sprinkle the shredded cheddar cheese over the mixture and cover the skillet until the cheese melts, about 2 minutes.
  7. Remove from heat and squeeze lime juice over the top. Garnish with fresh cilantro if desired.
  8. Portion the meal prep into containers and allow them to cool before sealing and storing in the refrigerator.
