- 1 medium onion, diced

- 1/4 teaspoon black pepper
- 1 can (14 ounces) diced tomatoes, undrained
- 1 cup cooked brown rice
- 1 can (15 ounces) black beans, drained and rinsed
- 1 cup frozen corn
- 1/2 cup shredded cheddar cheese (optional)
- 1 lime, cut into wedges
- Fresh cilantro for garnish (optional)
Feel free to substitute the ground beef with ground turkey or chicken for a leaner option. You can also swap the brown rice for quinoa or farro if you’re looking to mix things up!
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
- Stir in the diced bell pepper, cumin, smoked paprika, salt, and black pepper. Cook for an additional 3 minutes until the bell pepper softens.
- Pour in the diced tomatoes and bring the mixture to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
- Add the cooked brown rice, black beans, and frozen corn to the skillet. Stir to combine and cook until heated through, around 5 minutes.
- If using, sprinkle the shredded cheddar cheese over the mixture and cover the skillet until the cheese melts, about 2 minutes.
- Remove from heat and squeeze lime juice over the top. Garnish with fresh cilantro if desired.
- Portion the meal prep into containers and allow them to cool before sealing and storing in the refrigerator.
