Description

Learn how to make delicious ground beef lunch. Easy recipe with step-by-step instructions.

Ingredients

Scale

When creating this dish, I always think back to my early days of experimenting in the kitchen, like the time I attempted to fix an oversalted chili. It’s about balance and using what you have, so feel free to substitute where needed.

  • 1 pound ground beef (or a mix of beef and turkey for a lighter option)
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced (any color works)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup frozen corn
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and cook for another minute, being careful not to let it burn.
  3. Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 7-8 minutes.
  4. Stir in the diced bell pepper and cook for another 3 minutes until it starts to soften.
  5. Pour in the can of diced tomatoes, corn, paprika, and cumin. Stir everything together and bring to a simmer. Allow it to cook for 10 minutes, letting the flavors meld together.
  6. Season with salt and pepper to taste. If using, sprinkle shredded cheddar cheese on top and cover the skillet until the cheese melts.
  7. Garnish with fresh cilantro before serving for an added burst of flavor.
