- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced (any color works)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup frozen corn
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, being careful not to let it burn.
- Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 7-8 minutes.

- Pour in the can of diced tomatoes, corn, paprika, and cumin. Stir everything together and bring to a simmer. Allow it to cook for 10 minutes, letting the flavors meld together.
