- 1 pound boneless, skinless chicken breasts
- 2 tablespoons Jamaican jerk seasoning
- 2 tablespoons olive oil
- 12 ounces penne pasta
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Start by seasoning the chicken breasts generously with the Jamaican jerk seasoning. Make sure each piece is well coated.
- Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until cooked through and nicely browned. Remove from the skillet and set aside to rest.
- In the same skillet, add the sliced bell peppers and garlic. Sauté for about 3 minutes until the peppers are tender and the garlic is fragrant.
- Meanwhile, cook the penne pasta in a large pot of salted boiling water according to package instructions. Drain and set aside.
- Reduce the skillet heat to medium and pour in the heavy cream and chicken broth. Stir to combine, scraping up any browned bits from the bottom of the skillet.
- Add the Parmesan cheese to the skillet and stir until melted and the sauce becomes creamy. Season with salt and pepper to taste.
- Slice the cooked chicken breasts into strips and return them to the skillet along with the cooked pasta. Toss everything together until well combined and heated through.
