- 12 oz pasta (penne or rotini work great)
- 1 tablespoon olive oil
- 1 pound andouille sausage, sliced
- 1 pound chicken breast, diced
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon Cajun seasoning (adjust to taste)
- 1/2 teaspoon smoked paprika
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1/2 cup heavy cream (substitute with half and half for a lighter version)
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove and set aside.
- In the same skillet, add the diced chicken and cook until golden brown and cooked through, about 7 minutes. Remove and set aside with the sausage.
- Add the chopped onion and bell pepper to the skillet, sautéing until softened, about 5 minutes. Stir in the garlic, Cajun seasoning, and smoked paprika, cooking for an additional minute.
- Pour in the diced tomatoes and chicken broth, bringing the mixture to a simmer. Let it cook for about 10 minutes to allow the flavors to meld.
- Stir in the heavy cream and cooked meats, allowing the sauce to thicken slightly. Season with salt and pepper to taste.
- Add the cooked pasta to the skillet, tossing everything together until well combined. Allow it to heat through for a couple of minutes.
- Garnish with chopped parsley before serving. Enjoy your meal!
