Description

Learn how to make delicious Juicy Garlic Butter Lamb Chops. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 8 lamb rib chops (about 1-inch thick, roughly 1.5 pounds total)
  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt, to taste (about 1 teaspoon)
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 teaspoon lemon zest (optional, for brightness)
  • Fresh parsley, chopped, for garnish (optional)

Substitution tips: If you don’t have fresh herbs, dried works fine—just use about one-third the amount and add earlier in the cooking process to release their flavor. For butter, you can swap in ghee or a high-quality olive oil if dairy is a concern, but butter really helps create that luscious garlic sauce I love. And if lamb isn’t your thing, try the same technique with thick-cut pork chops for a similar result.

Instructions

  1. Start by patting your lamb chops dry with paper towels. Removing excess moisture helps get a beautiful, golden crust when searing. Season both sides generously with salt and freshly ground black pepper.
  2. Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Once hot, add the olive oil and swirl to coat.
  3. Carefully place the lamb chops in the pan, making sure not to overcrowd them. You want each chop to have contact with the pan to sear properly. Cook for about 3-4 minutes without moving, until the bottom is a deep, golden brown.
  4. Flip the chops and cook the other side for another 3 minutes. If your chops are thicker than an inch, add an extra minute or two per side.
  5. Reduce heat to medium-low and add the butter, minced garlic, rosemary, and thyme directly to the pan. As the butter melts, tilt the pan slightly and use a spoon to baste the chops with the garlic herb butter. This step infuses the meat with flavor and keeps it moist. Baste for about 2 minutes.
  6. Remove the pan from heat and transfer the lamb chops to a plate. Tent loosely with foil and let rest for 5 minutes. This allows the juices to redistribute, ensuring each bite is tender and juicy.
  7. Finish with a sprinkle of lemon zest and fresh parsley for a bright, fresh contrast to the rich garlic butter.

One of my favorite kitchen moments is the sizzle when those chops hit the pan—something about that sound makes the whole house feel alive and warm. I always remind myself, like I did back when I was twelve fixing that chili, that patience and attention to detail here pay off in the most delicious way.
