Gathering your ingredients is the first step to any great dish. Here’s what you’ll need:

  • 1 medium kabocha squash (about 2 pounds), peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 12 ounces pasta of your choice (penne or fusilli work well)
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Fresh basil leaves for garnish

If you’re out of heavy cream, you can substitute with half-and-half for a lighter version. And if Parmesan isn’t on hand, Pecorino Romano is a great alternative.


Instructions

  1. Preheat your oven to 400°F (200°C). Toss the cubed kabocha squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until tender and slightly caramelized.
  2. While the squash is roasting, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  3. In a large skillet over medium heat, add a splash of olive oil and sauté the minced garlic until fragrant, about 1 minute. Be careful not to burn it!
  4. Add the roasted kabocha squash to the skillet and gently mash it with a fork or potato masher.
  5. Stir in the heavy cream, Parmesan cheese, nutmeg, and red pepper flakes. Cook until the sauce is heated through and slightly thickened, about 5 minutes.
  6. Add the cooked pasta to the skillet, tossing to coat. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.
  7. Taste and adjust seasoning with salt and pepper. Serve hot, garnished with fresh basil leaves.

As a home cook, I’ve learned that visual cues are your best friend. Look for the squash to be golden and the sauce to cling to your pasta beautifully.
