- 1 pack (9 ounces) of fresh or frozen mushroom ravioli
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 8 ounces fresh mushrooms, sliced
- 3 cups fresh spinach leaves
- 1 cup heavy cream (or substitute with half-and-half for a lighter option)
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 teaspoon nutmeg (optional)
- Fresh parsley, chopped, for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the mushroom ravioli and cook according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Add the sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the mushrooms are tender and have released their juices.
- Stir in the fresh spinach leaves. Cook for 2-3 minutes until the spinach wilts down.
- Pour in the heavy cream and bring to a gentle simmer. Add the grated Parmesan cheese, stirring until melted and the sauce thickens slightly.
- Season the sauce with salt, pepper, and nutmeg if using. Adjust seasoning to taste.
- Add the cooked ravioli to the skillet, gently tossing to coat them in the creamy sauce.
- Remove from heat and garnish with fresh parsley before serving.
