If you don’t have graham crackers on hand, digestive biscuits or even vanilla wafers work well as a substitute. And if you’re avoiding dairy, coconut condensed milk or a thick nut milk concentrate can be a creative swap—just expect a slightly different texture.
Instructions
- In a microwave-safe bowl, gently melt the semi-sweet chocolate chips in 20-second intervals, stirring well between each, until smooth and glossy. This usually takes about 1 to 1½ minutes total. Avoid overheating to prevent seizing.
- In a medium bowl, combine the crushed graham crackers, shredded coconut (if using), and vanilla extract. Pour in the sweetened condensed milk and melted chocolate. Mix thoroughly until you get a sticky but moldable dough. The texture should hold together when pressed—you can test by squeezing a small amount in your hand.
- Using your hands, roll the mixture into small, bite-sized balls, about 1 inch in diameter. This recipe should yield roughly 15 to 20 truffles depending on size.
- On a clean surface, lay out the mini marshmallows. To assemble each snowman, stack two marshmallows vertically and gently press to adhere. Use a dab of melted chocolate as “glue” if needed.
- Attach the truffle balls to the bottom marshmallow with a small dab of melted chocolate, forming the snowman’s body.
- Decorate each snowman with mini chocolate chips for eyes and buttons. For the nose, place a tiny dot of orange sanding sugar or a small piece of orange candy on the marshmallow head. Use a toothpick dipped in melted chocolate for drawing arms or smiles if you like.
- For a snowy finish, you can optionally dip each truffle body in melted white chocolate and let them set on parchment paper. This extra step adds a festive touch, but it’s perfectly fine to skip it on busy days.
