  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, roughly chopped
  • 2 tablespoons fresh basil, finely chopped
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • Lemon zest from one lemon
  • 1 teaspoon dried oregano

For those who prefer a vegan version, you can substitute the heavy cream with coconut milk and use nutritional yeast in place of parmesan cheese for a cheesy flavor without dairy.


Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the cherry tomatoes and cook until they start to soften, about 3 minutes.
  3. Add the chopped spinach and cook until wilted, about 2 minutes. Stir in the fresh basil and oregano, and let the herbs release their aroma.
  4. Pour in the heavy cream and bring to a gentle simmer. Add the reserved pasta water to thin the sauce slightly, if needed.
  5. Stir in the grated parmesan cheese, allowing it to melt into the sauce. Season with salt, pepper, and lemon zest to taste.
  6. Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce. Let it cook for another minute to allow the flavors to meld.
  7. Serve hot, garnished with a sprinkle of additional parmesan and fresh basil, if desired.
