- 300g of your favorite pasta (spaghetti, penne, or fusilli work well)
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 cup baby spinach, roughly chopped
- 2 tablespoons fresh basil, finely chopped
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- Lemon zest from one lemon
- 1 teaspoon dried oregano
For those who prefer a vegan version, you can substitute the heavy cream with coconut milk and use nutritional yeast in place of parmesan cheese for a cheesy flavor without dairy.
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the cherry tomatoes and cook until they start to soften, about 3 minutes.
- Add the chopped spinach and cook until wilted, about 2 minutes. Stir in the fresh basil and oregano, and let the herbs release their aroma.
- Pour in the heavy cream and bring to a gentle simmer. Add the reserved pasta water to thin the sauce slightly, if needed.
- Stir in the grated parmesan cheese, allowing it to melt into the sauce. Season with salt, pepper, and lemon zest to taste.
- Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce. Let it cook for another minute to allow the flavors to meld.
- Serve hot, garnished with a sprinkle of additional parmesan and fresh basil, if desired.
