  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional for a little heat)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Feel free to substitute fresh herbs if you have them on hand, or add a splash of cream for a richer sauce. It’s all about making the recipe your own!


Instructions

  1. Bring a large pot of salted water to a boil, and cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta cooking water.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute, stirring frequently to prevent burning.
  4. Pour in the diced tomatoes, along with their juice, and stir in the oregano, basil, and red pepper flakes. Season with salt and pepper to taste.
  5. Let the sauce simmer for 10-15 minutes, allowing the flavors to meld together. If the sauce becomes too thick, add a bit of the reserved pasta water to reach your desired consistency.
  6. Toss the cooked pasta with the sauce, ensuring each piece is well coated. Stir in the Parmesan cheese until melted and creamy.
  7. Serve the pasta hot, garnished with fresh basil leaves, and enjoy a taste of our family table.
