- 12 ounces of your favorite pasta (penne or fusilli work well)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 ounces) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional for a little heat)
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish

Instructions
- Bring a large pot of salted water to a boil, and cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta cooking water.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, stirring frequently to prevent burning.
- Pour in the diced tomatoes, along with their juice, and stir in the oregano, basil, and red pepper flakes. Season with salt and pepper to taste.
- Let the sauce simmer for 10-15 minutes, allowing the flavors to meld together. If the sauce becomes too thick, add a bit of the reserved pasta water to reach your desired consistency.
- Toss the cooked pasta with the sauce, ensuring each piece is well coated. Stir in the Parmesan cheese until melted and creamy.
- Serve the pasta hot, garnished with fresh basil leaves, and enjoy a taste of our family table.
