Description

Learn how to make delicious Pumpkin Swirl Cheesecake Bars. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 cup graham cracker crumbs
  • 1/4 cup melted unsalted butter
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Substitution tip: If you’re out of graham crackers, you can easily swap them with digestive biscuits or even crushed vanilla wafers for a slightly different flavor profile.

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a small bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture firmly into the bottom of the prepared pan to form the crust.
  3. Bake the crust for 8-10 minutes, or until lightly golden. Remove from the oven and let it cool slightly.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy. Add in the vanilla extract and eggs, one at a time, mixing well after each addition.
  5. Set aside one cup of the cream cheese mixture. To the remaining mixture, add the pumpkin puree, cinnamon, nutmeg, ginger, and cloves. Stir until well combined.
  6. Pour the pumpkin mixture over the pre-baked crust. Dollop the reserved cream cheese mixture on top and use a knife to swirl it into the pumpkin layer, creating a marbled effect.
  7. Bake for 35-40 minutes, or until the center is set but still slightly jiggly. Cool to room temperature, then refrigerate for at least 2 hours before slicing and serving.

I remember the first time I swirled those flavors together, the anticipation of seeing those vivid layers was reminiscent of the excitement I felt during my culinary classes when a dish came together just right.
