Substitution tips: If you don’t have whole milk, you can use 2% or even a non-dairy milk like almond or oat milk. For butter, melted coconut oil works well for a dairy-free version. If you want to reduce sugar, consider swapping half the granulated sugar with a natural sweetener like maple syrup or honey, but adjust the liquid accordingly.


Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9-inch square baking dish or similar-sized oven-safe dish.
  2. In a medium bowl, toss the sliced bananas with the lemon juice. This helps prevent browning and adds a slight tang that brightens the flavor.
  3. Spread the bananas evenly in the bottom of the prepared baking dish.
  4. In a separate large bowl, whisk together the flour, 1/2 cup of the granulated sugar, baking powder, salt, and cinnamon until combined.
  5. Add the melted butter, milk, and vanilla extract to the dry ingredients. Stir gently just until combined—the batter will be slightly thick but still pourable. Overmixing can make the cobbler tough, so keep it light.
  6. Pour the batter evenly over the bananas in the baking dish. It might seem like the batter doesn’t fully cover the bananas, but it will spread as it bakes.
  7. Sprinkle the remaining 1/2 cup granulated sugar evenly over the top of the batter. This creates a lovely caramelized crust that is one of my favorite parts of the dish.
  8. Bake in the preheated oven for about 40-45 minutes. You’ll know it’s ready when the top is golden brown and a toothpick inserted into the cobbler (not the banana layer) comes out clean or with just a few moist crumbs.
  9. Remove from the oven and let it cool for 10-15 minutes before serving. This resting time helps the cobbler set slightly and makes it easier to scoop.
