Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a small baking dish or ovenproof skillet.
- Heat olive oil in a large skillet over medium heat. Add the diced onions and cook for 3-4 minutes until translucent and soft.
- Add the minced garlic and chopped mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms release their moisture and it evaporates, about 7-8 minutes. The mixture should look browned and fragrant—this step is key for deep flavor.
- Transfer the mushroom mixture to a large bowl and let it cool slightly for about 5 minutes. This prevents the cream cheese from melting too quickly when mixed.
- Add the softened cream cheese, sour cream, mozzarella, Parmesan, parsley, salt, pepper, and red pepper flakes (if using) to the bowl. Stir until everything is combined into a creamy, uniform mixture.
- Transfer the mixture into your prepared baking dish, smoothing the top with a spatula.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and bubbly around the edges. You’ll know it’s ready when the cheese is melted and the dip is heated through.
