- 1 packet (2 1/4 teaspoons) instant yeast
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup warm water (110°F)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Optional: 1/4 teaspoon red pepper flakes for a bit of heat
If you’re out of fresh parsley, dried will work too. And if mozzarella isn’t your cheese of choice, feel free to substitute with cheddar or a mix of your favorites. This recipe is flexible enough to accommodate what you have on hand.
Instructions
- In a large mixing bowl, combine the flour, yeast, salt, and sugar. Stir in the warm water and olive oil, mixing until a rough dough forms.
- Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. This is a great moment to involve the kids, as I often do with Eli, who loves to help knead.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- While the dough rises, prepare the filling by mixing the minced garlic, parsley, oregano, thyme, mozzarella, Parmesan, and red pepper flakes in a bowl.
- Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Once the dough has risen, punch it down gently and roll it out on a floured surface into a rectangle about 12×18 inches.
- Spread the garlic and herb cheese mixture evenly over the dough, leaving a small border around the edges.
- Starting from the longer side, roll the dough up tightly into a log. Pinch the seams to seal, then carefully place the log into the prepared loaf pan.
- Cover the loaf with a towel and let it rise for another 30 minutes.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the bread sounds hollow when tapped.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
