Description

Learn how to make delicious Thanksgiving Pumpkin Cheesecake. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree
  • 3 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • Optional: whipped cream for topping

Feel free to experiment with substitutions—use gingersnap crumbs instead of graham crackers for a spicier kick, or swap half the cream cheese for mascarpone if you’re feeling indulgent.

Instructions

  1. Preheat your oven to 325°F. Grease a 9-inch springform pan lightly with butter.
  2. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 3 minutes.
  4. Add 1 cup of sugar and vanilla extract to the cream cheese and continue beating until well blended.
  5. Mix in the pumpkin puree, followed by the eggs one at a time. Ensure each egg is fully incorporated before adding the next.
  6. Stir in cinnamon, nutmeg, ginger, and salt, mixing just until combined.
  7. Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. It will firm up as it cools.
  9. Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  10. Before serving, run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the springform pan. Top with whipped cream if desired.
