Instructions
- Preheat your oven to 325°F. Grease a 9-inch springform pan lightly with butter.
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan to form an even crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 3 minutes.
- Add 1 cup of sugar and vanilla extract to the cream cheese and continue beating until well blended.
- Mix in the pumpkin puree, followed by the eggs one at a time. Ensure each egg is fully incorporated before adding the next.
- Stir in cinnamon, nutmeg, ginger, and salt, mixing just until combined.
- Pour the cheesecake batter over the crust in the springform pan, smoothing the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. It will firm up as it cools.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight.
