- 3 pounds beef chuck roast
- 2 tablespoons olive oil
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 1/4 cup all-purpose flour
- 1 cup beef broth
- 1 cup dry red wine (or additional beef broth for a non-alcoholic version)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 2 teaspoons dried thyme
- Salt and pepper to taste
- 3 tablespoons unsalted butter
- 2 bay leaves
Instructions
- Preheat your oven to 325°F. Pat the beef chuck roast dry with paper towels, then season generously with salt and pepper.
- In a large Dutch oven, heat the olive oil over medium-high heat. Brown the roast on all sides, about 4-5 minutes per side. Remove the roast from the pot and set aside.
- Reduce the heat to medium and add the butter to the pot. Once melted, add the onions and a pinch of salt. Cook, stirring occasionally, until the onions are deeply caramelized, about 25-30 minutes.
- Add the garlic and cook for another minute until fragrant. Stir in the flour and cook for 1-2 minutes more.
- Deglaze the pot by adding the beef broth, red wine, Worcestershire sauce, and balsamic vinegar, scraping up any browned bits from the bottom of the pot.
- Return the roast to the pot, nestling it among the onions. Add the thyme and bay leaves, then bring the mixture to a simmer.
- Cover the pot and transfer it to the oven. Cook for 3-4 hours, or until the beef is fork-tender and the flavors have melded beautifully.
- Remove the bay leaves before serving, and adjust seasoning with additional salt and pepper if needed.
