  • 2 tablespoons olive oil
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 cup beef broth
  • 1 cup dry red wine (or additional beef broth for a non-alcoholic version)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons dried thyme
  • Salt and pepper to taste
  • 3 tablespoons unsalted butter
  • 2 bay leaves


Instructions

  1. Preheat your oven to 325°F. Pat the beef chuck roast dry with paper towels, then season generously with salt and pepper.
  2. In a large Dutch oven, heat the olive oil over medium-high heat. Brown the roast on all sides, about 4-5 minutes per side. Remove the roast from the pot and set aside.
  3. Reduce the heat to medium and add the butter to the pot. Once melted, add the onions and a pinch of salt. Cook, stirring occasionally, until the onions are deeply caramelized, about 25-30 minutes.
  4. Add the garlic and cook for another minute until fragrant. Stir in the flour and cook for 1-2 minutes more.
  5. Deglaze the pot by adding the beef broth, red wine, Worcestershire sauce, and balsamic vinegar, scraping up any browned bits from the bottom of the pot.
  6. Return the roast to the pot, nestling it among the onions. Add the thyme and bay leaves, then bring the mixture to a simmer.
  7. Cover the pot and transfer it to the oven. Cook for 3-4 hours, or until the beef is fork-tender and the flavors have melded beautifully.
  8. Remove the bay leaves before serving, and adjust seasoning with additional salt and pepper if needed.
