- Begin by preparing your ingredients: peel and dice the potatoes, chop the onion, and mince the garlic.
- In the base of your crockpot, add the diced potatoes, chopped onion, and minced garlic.
- Pour in the chicken broth, ensuring that the vegetables are fully submerged.
- Add salt, pepper, thyme, and smoked paprika. Stir well to combine all the flavors.
- Set your crockpot to cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender and easily mashed.
