- 1 ball (about 12 ounces) of store-bought pizza dough, or homemade if you prefer
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1/3 cup tomato sauce (homemade or your favorite jarred variety)
- 1 tablespoon olive oil, plus extra for drizzling
- 2 teaspoons honey, plus extra for drizzling after baking
- 1/2 teaspoon red pepper flakes (optional, to boost the heat)
- 1 small red onion, thinly sliced
- Fresh basil leaves, for garnish
Substitution tips: If you don’t have hot Italian sausage, spicy chorizo or even a mix of ground pork with a pinch of cayenne will work beautifully. For feta, try goat cheese if you want a creamier texture. And if you don’t have pizza dough handy, a naan or pita bread can be a quick base in a pinch.
Instructions
- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up—it’ll help get that perfect crispy crust.
- In a skillet over medium heat, add the olive oil and cook the hot sausage, breaking it up with a spoon. Cook until browned and cooked through, about 7-8 minutes. Drain any excess fat, then stir in 2 teaspoons of honey and red pepper flakes if using. This little touch of honey in the sausage is a nod to my early kitchen experiments balancing flavors and really makes the spice pop without overwhelming.
- While the sausage cooks, roll out your pizza dough on a lightly floured surface to about 12 inches in diameter. Transfer it to a parchment-lined baking sheet or a pizza peel if using a stone.
- Spread the tomato sauce evenly over the dough, leaving a small border around the edges for the crust. Sprinkle the shredded mozzarella over the sauce.
- Distribute the cooked sausage evenly over the cheese, then add the crumbled feta and thin slices of red onion on top. The red onion adds a fresh bite and a bit of crunch that balances the richness—Maya swears by this addition for keeping things lively at the dinner table.
- Drizzle a little olive oil around the edges and pop the pizza into the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
- Remove from the oven and immediately drizzle with a little extra honey and scatter fresh basil leaves on top. The honey drizzle right out of the oven is my favorite finishing touch; it’s a sweet surprise that cuts through the spicy sausage and creamy cheese beautifully.
- Let the pizza cool for a couple of minutes, then slice and serve. Trust me, this pizza is best enjoyed fresh, but if Eli’s anything like he was at that early age, it might not last long enough to reheat!
