- 4 large flour tortillas (10-inch size works well; whole wheat or gluten-free tortillas can be used)
- 2 cups shredded sharp cheddar cheese (feel free to mix in Monterey Jack or pepper jack for a little kick)
- 1/2 cup diced white onion
- 1/2 cup diced pickles (optional, but adds that classic smashburger tang)
- 2 tablespoons butter (for crisping the quesadilla; olive oil can be a substitute)
- Ketchup and mustard for drizzling inside (adjust to taste; you can also use your favorite burger sauce)
Instructions
- Preheat a large cast-iron skillet or non-stick pan over medium-high heat for about 3 minutes. A hot pan is essential to get that crispy crust on the patties.
- Divide the ground beef into eight equal portions (about 2 ounces each). Season each side with salt, pepper, garlic powder, and onion powder.
- Place one portion of beef on the hot skillet. Using a sturdy spatula or burger press, smash the patty firmly into the pan until it’s about 1/4-inch thick. Cook for 2-3 minutes without moving it to develop a crust.
- Flip the patty and cook for another 1-2 minutes until fully cooked and crispy on both sides. Repeat with remaining portions, keeping cooked patties warm on a plate covered with foil.
- Reduce heat to medium-low. Butter one side of a tortilla and place it butter-side-down in the skillet.
- Layer 1/4 cup shredded cheese over half the tortilla. Add two smashburger patties, a sprinkle of diced onion, pickles, and a drizzle of ketchup and mustard.
- Top with another 1/4 cup shredded cheese, then fold the tortilla over to form a half-moon shape.
- Cook for 2-3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted.
- Remove from the pan and let rest for a minute before slicing into wedges. This resting time helps the cheese set just enough to keep the quesadilla together.
